Write on a sandwich baggie “Frosting Mix” so that you can distinguish which is cake mix and which is for frosting. Pack cake ingredients in the bottom of a wide-mouth pint-and-a-half or quart jar. I used pernigotti for both the sample cake and the frosting. Just use a cocoa of very high quality, as your cake is only as good as the ingredients you use to make it. Note on cocoa: You can use either natural or dutch process cocoa in this recipe. I use White Lily, but have also used cake flour interchangeably with it I recommend cake flour here because White Lily isn’t locally available everywhere.
Note on flour: You can use White Lily all purpose flour in place of cake flour it’s the only all purpose flour you can use if you want a high, light cake. And if you want to make a full-size version, all you have to do is TRIPLE the recipe and bake in two 9″ round cake pans or a 9″x13″ pan. It’s the perfect size for having just a little something sweet after dinner. This cake is baby cake size, so it’s perfect for a small family of two or three you’ll end up with at least a couple of slices for each family member, depending on how big you cut them.
So why not have a few cake recipes in your repertoire? After all, if you have a fully stocked food supply, you already have all the ingredients necessary to make a cake so why spend money on commercially prepared mixes when you can create something far better yourself and save some money doing it? Celebrations like birthdays, anniversaries, promotions, and weddings all call for cake and those events will still happen, even in an emergency situation. I don’t know about you, but for me, sometimes I just need cake. Dark, rich chocolate cake a just-add-water mix from your food storage.
